Cool After School Part 4 – Chicken Italiano

The chef’s prepare the main entree for the dinner. Chicken breasts with sun dried tomato pesto, Parmesan, fresh basil and garlic for the rub.
Cool After School Part 5 – Caprici Salad

Tomatoes, Fresh Mozzarella, Basil, Extra Virgin Olive Oil, Balsamic Vinegar, Salt and Pepper.
To start, pour a small pool of Extra Virgin Olive Oil and a little Balsamic Vinegar. Next Slice the tomatoes and then create a tomato sandwich using the mozzarella and basil. Top off with a little more balsamic vinaigrette, salt and pepper.
Cool After School Part 6 – Arugula Salad

For the dressing, in a food processor add fresh basil, Dijon mustard, nectar, salt and pepper, the juice of 1 lemon, extra virgin olive oil, a dash of balsamic vinaigrette and blend.
For the salad, roast pine nuts, until you can smell them in the air and remove from heat. In a large bowl fill with arugula leaves and slice fresh Parmesan and avocados and then top off the salad with pine nuts.
