Happy Holidays from Colorado Magazine, this week we go from Boulder to Colorado Springs, starting with our video blogs, the 3 minute Gourmet with Michael Long and his fall Bartlett pear and tender pork loin dish, then Baking with Scott has a special guest who makes all the holiday pies, hotshots movie reviews with Dan Culberson looks at the movie “American Gangster”, after that we start our traveling at the Boulder Millennium Harvest House’s Friday Afternoon club, holiday decorations and home furnishings at Fruehauf’s Patio and Garden Center, then we take the time to look at fine jewelry at the Swiss Chalet Watch and Clock Shop. In Denver we visit with an outstanding family restaurant at Cherokee Dining on 12th Avenue, and our show ends with a look at the high quality electronics from Listen Up Audio and Video in Colorado Springs on this holiday week of Colorado Magazine.

Chef Long makes a seasonal fall dish with Bartlett pear and tender pork loin. Starting with the pork trim off the fat so it’s nice and lean. Next season with salt and pepper on each side add some oil to the pan and sear the loins until their brown on each sides. When the second side of the pork is getting brown, place the pears on top and next the Gorgonzola cheese, then remove the medallions and place them on a sheet pan and in the oven.
For the sauce, deglaze the pan with some apple cider, then scrape the extra pork bits into small piles and then add the au jus sauce. Now pour sauce on plate as a reduction add a small ball of spaghetti squash, cranberry jam, walnuts, and finally place the pork loins down for the final touches in this wonderful fall meal.
